Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or chicken for a lighter option)

1/2 cup breadcrumbs

1/4 cup scallions, finely chopped

2 cloves garlic, minced

1 tbsp ginger, grated

1/4 cup soy sauce

2 tbsp sesame oil

1 tbsp brown sugar

1 egg

1/2 tsp black pepper

1/2 tsp red pepper flakes (adjust for spice level)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tbsp Sriracha (adjust for spice level)

1 tsp lime juice

1 tsp sesame oil

1 tsp honey (optional, for sweetness)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, scallions, minced garlic, grated ginger, soy sauce, sesame oil, brown sugar, egg, black pepper, and red pepper flakes. Mix everything together until just combined. Be careful not to overmix, as this can lead to tough meatballs.

      Shape the Meatballs: Using your hands, shape the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper, making sure to leave space between each one.

        Bake the Meatballs: Bake the meatballs in the preheated oven for about 15-20 minutes or until they are browned and cooked through (internal temperature should reach 160°F or 70°C).

          Make the Spicy Mayo Dip: While the meatballs are baking, prepare the spicy mayo dip. In a small bowl, whisk together the mayonnaise, Sriracha, lime juice, sesame oil, and honey (if using). Adjust the Sriracha and lime juice to your taste for desired spice and tanginess.
