8 oz pasta of your choice (whole wheat or gluten-free recommended)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper (red or yellow), diced

1/4 cup red onion, finely chopped

1/2 cup fresh basil leaves, chopped

1/4 cup olive oil

1/4 cup lemon juice (freshly squeezed)

2 cloves garlic, minced

Salt and pepper to taste

1/4 cup nutritional yeast (optional, for a cheesy flavor)

1 avocado, sliced (for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool the pasta down.
