1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

Zest of 1 lemon

½ cup freshly squeezed lemon juice

1 teaspoon vanilla extract

1 cup fresh blueberries (or frozen, if fresh isn't available)

1 tablespoon all-purpose flour (for coating blueberries)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.

    In a mixing bowl, combine 1 ½ cups of all-purpose flour, baking powder, baking soda, and salt. Whisk together until well combined and set aside.

      In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.

        Add the eggs, one at a time, mixing well after each addition. Incorporate the lemon zest, lemon juice, and vanilla extract; mix until blended.

          Gradually add the flour mixture to the wet ingredients, alternating with the buttermilk, beginning and ending with the flour mixture. Mix just until combined.

            In a small bowl, toss the blueberries with 1 tablespoon of all-purpose flour to coat them, which helps prevent sinking in the batter.

              Gently fold the blueberries into the batter just until incorporated. Do not overmix.

                Pour the batter into the prepared loaf pan and smooth the top with a spatula.

                  Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, tent it loosely with aluminum foil.

                    Allow the bread to cool in the pan for about 10-15 minutes, then transfer it to a wire rack to cool completely.
