12 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional, adjust to taste)

Zest of 1 lemon

Juice of 1 lemon

4 cups fresh spinach

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Cook pasta: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

    Prepare shrimp: While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the shrimp and season with salt and pepper. Sauté for 2-3 minutes until the shrimp turns pink and opaque. Remove shrimp from the skillet and set aside.

      Sauté garlic: In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and red pepper flakes (if using), and sauté for about 30 seconds until fragrant.

        Add spinach: Toss in the fresh spinach and cook until wilted, about 2-3 minutes.

          Combine: Return the shrimp to the skillet, then add the cooked pasta, lemon zest, lemon juice, and some of the reserved pasta water. Toss everything together; if the pasta seems dry, add more pasta water until you reach your desired consistency.

            Finish: Stir in the grated Parmesan cheese and adjust the seasoning with salt and pepper to taste.
