Ingredients
  

4 large eggs

1 medium avocado, diced

1 cup spinach, fresh

1 small bell pepper, diced

1 small zucchini, diced

1/4 cup onion, finely chopped

1 tablespoon olive oil

Salt and pepper to taste

1/2 teaspoon garlic powder

1/2 teaspoon cumin (optional)

Low carb tortilla or lettuce leaves (for wrapping)

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Vegetables: Heat olive oil in a skillet over medium heat. Add onions and bell peppers, and sauté for 2-3 minutes until softened.

    Add Zucchini and Spinach: Stir in the zucchini and cook for another 2 minutes. Then add the spinach and cook until wilted (about 1 minute). Season with salt, pepper, garlic powder, and cumin. Remove from heat and set aside.

      Scramble the Eggs: In a bowl, whisk together the eggs and a pinch of salt. Pour the eggs into a non-stick skillet over medium-low heat. Stir gently with a spatula until the eggs are just set but still creamy. Remove from heat.

        Assemble the Burrito: If using a low carb tortilla, lay it flat. If using lettuce, lay down a large leaf. Add a generous portion of the sautéed vegetable mixture, followed by scrambled eggs, and top with diced avocado.

          Roll and Serve: Roll the tortilla tightly to enclose the filling. If using lettuce, fold in the sides and then roll up. Garnish with fresh cilantro if desired. Serve immediately.
