4 large whole eggs

8 large egg whites

1 cup cooked black beans, rinsed and drained

1 cup cherry tomatoes, halved

1 cup bell peppers, diced (mix of red, yellow, and green)

1 cup spinach, chopped

1/2 cup low-fat shredded cheese (cheddar or Monterey Jack)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

Salt and pepper to taste

4 large whole wheat tortillas

Fresh cilantro, chopped (for garnish)

Avocado, sliced (for serving)

Salsa (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sheet Pan: Line a large sheet pan with parchment paper for easy cleanup.

      Mix the Eggs: In a large bowl, whisk together the whole eggs and egg whites. Season with garlic powder, onion powder, cumin, salt, and pepper. Mix in the cooked black beans, cherry tomatoes, bell peppers, and spinach until all ingredients are evenly combined.

        Bake the Egg Mixture: Pour the egg mixture onto the parchment-lined sheet pan, spreading it out evenly. Bake in the preheated oven for 15-20 minutes, or until the eggs are just set and lightly golden. Remove from the oven and let it cool for a few minutes.

          Assemble the Burritos: Once the egg mixture is cool enough to handle, chop it into smaller pieces. Lay out the whole wheat tortillas on a clean surface. Divide the egg mixture among the tortillas, adding a pinch of shredded cheese to each. Roll them up tightly burrito-style.
