Ingredients

2 boneless, skinless chicken breasts

Salt and pepper to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional, for heat)

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

8 ounces fettuccine or pasta of choice

Fresh basil leaves for garnish

Additional grated Parmesan for serving

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for about 6-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and let rest.

Make the Sauce: In the same skillet, reduce the heat to medium-low. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.

Add Tomatoes and Cream: Stir in the cherry tomatoes and cook for another 2 minutes. Then, pour in the heavy cream and bring to a gentle simmer.

Incorporate Cheese and Seasoning: Gradually stir in the grated Parmesan cheese and Italian seasoning, mixing until the cheese is melted and the sauce is creamy.

Cook the Pasta: Meanwhile, cook the fettuccine in a large pot of salted boiling water according to package instructions. Drain and set aside.

Combine Everything: Slice the cooked chicken and add it back to the skillet with the sauce. Stir to coat the chicken. Toss the cooked pasta in the skillet until well combined.

Garnish and Serve: Plate the pasta, and garnish with fresh basil leaves and additional grated Parmesan cheese. Serve hot and enjoy the romantic flavors!
