Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

8 oz pasta (linguine or fettuccine works well)

Fresh basil leaves, for garnish

Instructions

Cook the Pasta: Begin by cooking your pasta according to the package instructions. Drain and set aside, reserving about 1 cup of pasta water.

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5-7 minutes on each side or until golden brown and cooked through. Remove from the skillet and set aside.

Sauté Garlic and Spice: In the same skillet, add the minced garlic and red pepper flakes. Sauté for about 1 minute or until fragrant.

Make the Sauce: Stir in the chopped sun-dried tomatoes, followed by the heavy cream and chicken broth. Bring to a simmer, then reduce heat to medium-low.

Add Cheese and Seasoning: Stir in the Parmesan cheese and Italian seasoning until melted and smooth. If the sauce is too thick, add some reserved pasta water to reach desired consistency.

Combine Chicken and Pasta: Slice the seared chicken and add it back into the skillet. Add the cooked pasta and toss everything together until well combined.

Serve: Plate the pasta and garnish with fresh basil leaves. If desired, sprinkle with additional Parmesan cheese.
