Ingredients

2 large chicken breasts (sliced into thin strips)

Salt and pepper (to taste)

2 tablespoons olive oil

3 cloves garlic (minced)

1 teaspoon red pepper flakes (optional)

1 cup sun-dried tomatoes (chopped)

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon dried basil

1 teaspoon dried oregano

8 ounces fettuccine or pasta of choice

Fresh basil leaves (for garnish)

Parmesan shavings (for garnish)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Sauté the Chicken: Season the sliced chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken strips to the skillet and sauté until golden brown and cooked through, about 4-5 minutes. Remove chicken from the skillet and set aside.

Prepare the Sauce: In the same skillet, add minced garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant. Add the sun-dried tomatoes and cook for another minute.

Create the Creamy Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer and let it cook for 3-4 minutes until it starts to thicken slightly.

Add Cheese and Herbs: Stir in the grated Parmesan, dried basil, and oregano, mixing until the cheese is melted and the sauce is creamy. If the sauce becomes too thick, add some reserved pasta water to achieve the desired consistency.

Combine Pasta and Chicken: Add the cooked pasta and the sautéed chicken back into the skillet. Toss everything together until the pasta is evenly coated with the sauce.

Serve: Plate the pasta and garnish with fresh basil leaves and Parmesan shavings. Serve immediately and enjoy a meal that might just lead to a proposal!
