Ingredients

1 lb flank steak

1 tablespoon olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

1 cup cooked quinoa or rice

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

½ red onion, thinly sliced

½ cup Kalamata olives, pitted and halved

½ cup feta cheese, crumbled

2 tablespoons fresh parsley, chopped

Lemon wedges, for serving

Tzatziki sauce, for drizzling (optional)

Instructions

Marinate the Steak: In a small bowl, mix olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub this mixture all over the flank steak. Allow it to marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

Cook the Steak: Preheat a grill or skillet over medium-high heat. Cook the marinated steak for about 5-7 minutes on each side for medium-rare, or until desired doneness. Once done, transfer to a cutting board and let it rest for 5-10 minutes.

Prepare the Bowls: While the steak rests, prepare the vegetables. In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, and Kalamata olives. Toss gently, seasoning with salt and pepper to taste.

Slice the Steak: After resting, slice the steak against the grain into thin strips.

Assemble the Bowls: In serving bowls, layer the cooked quinoa or rice. Top with the vegetable mixture, then arrange the sliced steak on top. Sprinkle with crumbled feta cheese and chopped parsley.

Serve and Enjoy: Serve the Mediterranean steak bowls with lemon wedges on the side, and drizzle with tzatziki sauce if desired for added flavor.
