3 large eggs

1/4 cup fresh mozzarella cheese, shredded

2 tablespoons milk

1 tablespoon fresh basil, chopped (optional)

1 tablespoon olive oil or butter

Salt and pepper, to taste

1 small tomato, diced (optional)

1/4 cup spinach leaves, chopped (optional)

Instructions
 

In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy.

    Stir in the fresh mozzarella cheese, chopped basil, and any optional ingredients like diced tomato or spinach.

      Heat the olive oil or butter in a nonstick skillet over medium heat until hot.

        Pour the egg mixture into the skillet, tilting the pan to ensure it spreads evenly across the surface.

          Cook for 2-3 minutes, or until the edges start to set and the bottom is lightly browned.

            Using a spatula, gently lift the edges of the omelet to allow uncooked eggs to flow underneath.

              Once the top starts to set but is still slightly runny, fold the omelet in half and cook for another minute to allow the cheese to melt.

                Carefully slide the omelet onto a plate and garnish with extra basil or a sprinkle of pepper, if desired. Serve hot!
