No Bake Pineapple Cream Dessert

1 can (20 oz) crushed pineapple, drained

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup toasted coconut flakes (optional, for garnish)

Fresh pineapple slices (for garnish)

Instructions
 

Prepare the crust: In a mixing bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs are evenly coated. Press this mixture into the bottom of a 9x9 inch square baking dish to form a solid crust layer. Set aside.

    Make the cream cheese filling: In a large bowl, beat the softened cream cheese with a hand mixer until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth and well combined.

      Whip the cream: In a separate bowl, whip the heavy cream using a hand mixer until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture until fully incorporated.

        Combine with pineapple: Gently fold in the drained crushed pineapple into the cream cheese and whipped cream mixture until evenly distributed.

          Layer the dessert: Spread half of the pineapple cream mixture over the prepared graham cracker crust. Then layer the remaining cream mixture on top, smoothing it out with a spatula.

            Chill: Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow it to set properly.
