3 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

1 ½ cups warm water (110°F or 43°C)

2 tbsp olive oil

1 tsp sugar

1 tsp salt

1 tbsp herbs de Provence (optional)

¼ cup cornmeal (for dusting)

Instructions
 

In a small bowl, combine the warm water, sugar, and yeast. Stir gently, then let it sit for about 5-10 minutes, until foamy.

    In a large mixing bowl, combine the flour, salt, and herbs de Provence. Make a well in the center and add the olive oil and the activated yeast mixture.

      Mix until a shaggy dough forms. Dust your clean countertop with a little flour and knead the dough for about 5-7 minutes, until it becomes smooth and elastic.

        Form the dough into a ball and place it in a lightly greased bowl, covering it with a damp cloth. Let it rise in a warm place for about 45 minutes, or until it doubles in size.

          Once the dough has risen, punch it down and let it rest for 5 minutes. Divide the dough into two equal portions and shape each into a round or oval loaf.

            Sprinkle a large skillet with cornmeal. Place each shaped dough onto the skillet, covering it with a lid to create steam. Let it rest for an additional 30 minutes.

              In the meantime, heat your skillet over low to medium heat for about 5 minutes. After resting, increase the heat slightly and cook the bread for 25-30 minutes, flipping halfway through. The bread should sound hollow when tapped on the bottom.

                Once cooked, remove from the skillet and let cool on a wire rack.
