To truly appreciate goulash, it’s essential to understand its origins. Goulash traces back to 9th-century Hungary, where it was a simple stew made by shepherds who would cook meat and vegetables together in a pot over an open fire. The dish was known as "gulyás," derived from the word "gulyás," meaning herdsman. It was a practical meal, utilizing whatever ingredients were available, often including beef, potatoes, and sometimes seasonal vegetables.

Ingredients

2 tablespoons olive oil

1 pound ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, diced (red or green)

1 can (15 oz) diced tomatoes (with juice)

1 can (6 oz) tomato paste

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon paprika

Salt and pepper to taste

3 cups elbow macaroni (or any pasta of your choice)

1 cup shredded cheddar cheese (optional for topping)

Fresh parsley for garnish (optional)

Instructions

Brown the Meat: In a large pot, heat the olive oil over medium heat. Add the ground beef and brown it, breaking it apart with a wooden spoon until it is no longer pink. Drain excess fat if necessary.

Sauté the Vegetables: Add the chopped onion, minced garlic, and diced bell pepper to the pot. Sauté for about 5 minutes until the vegetables are softened and fragrant.

Combine the Sauce: Stir in the diced tomatoes, tomato paste, beef broth, and Worcestershire sauce. Mix in the oregano, basil, paprika, salt, and pepper. Bring to a simmer.

Add the Pasta: Once the sauce is simmering, add the elbow macaroni. Stir to combine, ensuring the pasta is submerged in the sauce. Cover and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente.

Finishing Touches: Once the pasta is cooked to your liking, taste and adjust seasoning if necessary. If desired, sprinkle shredded cheddar cheese on top, cover, and let it melt for an additional 2-3 minutes.

Serve: Garnish with chopped fresh parsley if desired and serve hot. Enjoy your comforting bowl of old-fashioned goulash!
