1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, diced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 teaspoon dried thyme

1 teaspoon dried basil

Zest of 1 lemon

Juice of 1 lemon

16 oz (450g) potato gnocchi

1 cup (90g) baby spinach

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chicken pieces, seasoning with salt and pepper. Cook until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.

    Cook the Aromatics: In the same pot, add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook until fragrant, about 1 minute more.

      Add Liquids and Seasoning: Pour in the chicken broth and heavy cream, stirring to combine. Add the dried thyme, dried basil, lemon zest, and lemon juice. Bring the mixture to a gentle simmer.

        Introduce the Gnocchi: Add the potato gnocchi to the pot, stirring gently to distribute them evenly in the creamy sauce. Let it simmer for about 2-3 minutes or until the gnocchi starts to float to the surface.
