One Skillet Salmon with Lemon Orzo

2 salmon fillets, skin-on

1 cup orzo pasta

2 tablespoons olive oil

1 small onion, diced

2 garlic cloves, minced

3 cups vegetable broth or chicken broth

Zest of 1 lemon

Juice of 1 lemon

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

Salt and pepper to taste

Fresh parsley, chopped for garnish

Lemon slices for serving

Prepare the Orzo: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute, until fragrant.

    Cook the Orzo: Add the orzo to the skillet, stirring to coat in the onion and garlic mixture. Pour in the vegetable or chicken broth, lemon zest, and season with salt and pepper. Bring to a boil, then reduce heat to low and let simmer for about 10-12 minutes, or until the orzo is al dente and most of the liquid is absorbed.

      Sear the Salmon: While the orzo is cooking, heat the remaining tablespoon of olive oil in a separate non-stick skillet over medium-high heat. Season the salmon fillets with salt and pepper. Place them skin-side down into the skillet and cook for about 4-5 minutes. Flip carefully and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.
