Ingredients
  

4 cups fresh mixed greens (spinach, arugula, and romaine)

2 large oranges, segmented

1 cup mandarins, drained (canned or fresh)

1 cup Greek yogurt

2 tablespoons honey

1 teaspoon vanilla extract

1/4 cup slivered almonds (toasted)

1/4 cup mini marshmallows

2 tablespoons fresh mint leaves, chopped

Salt and pepper to taste

Optional: 1/2 cup shredded coconut (toasted)

Instructions
 

Prepare the Dressing: In a medium bowl, combine the Greek yogurt, honey, and vanilla extract. Whisk until the mixture is smooth and creamy. Season with a pinch of salt and pepper. Set aside.

    Prepare the Salad Base: In a large salad bowl, add the fresh mixed greens as the base for your salad.

      Add the Fruits: Gently fold in the orange segments, mandarin oranges, and chopped mint leaves to the greens, ensuring the fruit is evenly distributed.

        Add the Crunch: Sprinkle the toasted slivered almonds and mini marshmallows over the top of the salad. If you’re using shredded coconut, add it at this time as well.

          Dress the Salad: Drizzle the yogurt dressing generously over the salad. Toss gently to combine, being careful not to bruise the greens.

            Serve: Serve immediately to enjoy the freshness, or refrigerate for about 15 minutes before serving to let the flavors meld together.
