Overnight Crème Brûlée French Toast

Made with rich brioche or challah bread, this recipe combines a creamy custard soaking and a caramelized sugar topping for a sweet, crunchy finish. Simply layer the bread, mix the custard, let it soak overnight, then bake to perfection. Perfect for brunch gatherings or a cozy family treat. Ingredients
  

1 loaf of brioche or challah bread, sliced (about 8-10 slices)

4 large eggs

1 cup whole milk

1 cup heavy cream

1 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon pure almond extract

1/4 teaspoon ground cinnamon

Pinch of salt

2 tablespoons unsalted butter (for greasing)

1/2 cup granulated sugar (for the brûlée topping)

Instructions
 

Prepare the Baking Dish: Grease a 9x13-inch baking dish with unsalted butter to prevent sticking.

    Arrange the Bread: Layer the sliced brioche or challah bread in the prepared baking dish, overlapping slightly if necessary to fit.

      Make the Custard Mixture: In a large bowl, whisk together the eggs, whole milk, heavy cream, 1 cup of sugar, vanilla extract, almond extract, ground cinnamon, and a pinch of salt until well combined.

        Pour the Custard: Carefully pour the custard mixture evenly over the bread slices, ensuring every piece is soaked. Press the bread down gently with a spatula if needed to ensure it's submerged.

          Cover and Refrigerate: Cover the baking dish with plastic wrap or a lid and refrigerate overnight (or at least for 4-6 hours) to allow the bread to absorb the custard.

            Preheat the Oven: When ready to bake, preheat your oven to 350°F (175°C).

              Bake the French Toast: Remove the plastic wrap and bake the French toast uncovered for about 30-35 minutes, or until it’s puffed and lightly golden on top.

                Caramelize the Topping: After baking, remove from the oven and let it cool slightly. Evenly sprinkle 1/2 cup of granulated sugar on top of the cooked French toast. Using a kitchen torch, carefully caramelize the sugar until it melts and turns into a golden brown crust. (If you don’t have a torch, place it under the broiler for 1-2 minutes, watching closely to avoid burning.)

                  Serve: Allow to cool for a couple of minutes before slicing. Serve warm with fresh fruit, maple syrup, or whipped cream, if desired.
