1 cup cornmeal (coarse or medium grind)

4 cups water or vegetable broth

1 cup whole milk (or alternative)

½ cup grated Parmesan cheese

3 tablespoons unsalted butter

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon finely chopped fresh basil

1 tablespoon finely chopped fresh parsley

1 teaspoon garlic powder

Optional toppings: sautéed mushrooms, roasted vegetables, or a drizzle of balsamic glaze

Instructions
 

In a large saucepan, bring the water or vegetable broth to a boil. Add the salt and garlic powder to the liquid.

    Gradually whisk in the cornmeal, stirring constantly to prevent lumps. Reduce the heat to low and continue to stir as the mixture thickens, about 5 to 10 minutes.

      Once the polenta is thick and creamy, remove it from heat. Stir in the butter, whole milk, and Parmesan cheese until fully incorporated.
