Ingredients
  

2 cups elbow macaroni

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Vegetables: In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, finely chopped red onion, and sliced black olives.

      Mix the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.

        Combine Ingredients: Add the cooled pasta to the bowl with the vegetables. Pour the dressing over the mixture and toss until everything is well coated.

          Add Cheese and Herbs: Gently fold in the crumbled feta cheese and chopped parsley. Adjust salt and pepper to taste if needed.
