Peaches and Cream Cheesecake Bars

For the crust:

1 ½ cups graham cracker crumbs

½ cup granulated sugar

½ cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup sour cream

1 cup fresh peaches, peeled and diced (about 2 medium peaches)

For the peach topping:

1 cup fresh peaches, sliced

2 tbsp sugar

1 tbsp lemon juice

1 tsp cornstarch

Instructions
 

Preheat the oven to 325°F (160°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand. Press the mixture firmly into the bottom of the lined baking pan. Bake for 10 minutes, then remove and set aside to cool.

      Make the cheesecake filling: In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until well combined. Gently fold in the diced peaches.

        Combine: Pour the cheesecake filling over the pre-baked crust, spreading it evenly.

          Bake: Place in the preheated oven and bake for 30-35 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven and crack the door open, letting the cheesecake cool inside for about 1 hour.

            Prepare the peach topping: In a small saucepan, combine the sliced peaches, sugar, lemon juice, and cornstarch. Cook over medium heat until the mixture starts to bubble and thicken, about 3-5 minutes. Remove from heat and let it cool slightly.

              Assemble: Once the cheesecake has cooled, dollop the peach topping over the cheesecake layer. Spread it gently with a spatula to cover evenly.

                Chill: Cover and refrigerate the cheesecake bars for at least 4 hours or overnight for best results.
