Peruvian Grilled Chicken with Creamy Green Sauce

Ingredients
  

4 boneless, skinless chicken thighs

4 garlic cloves, minced

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup olive oil

1/4 cup freshly squeezed lime juice

1/4 cup fresh cilantro leaves

1/2 jalapeño, seeds removed (adjust for spice preference)

1/2 cup mayonnaise

1/4 cup Greek yogurt

2 tablespoons fresh lime juice (for the sauce)

Salt and pepper to taste

Instructions
 

Marinate the Chicken:

    In a bowl, combine minced garlic, cumin, paprika, salt, black pepper, olive oil, and lime juice. Mix well. Add the chicken thighs to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 1 hour, preferably overnight.

      Prepare the Creamy Green Sauce:

        In a blender or food processor, combine cilantro, jalapeño, mayonnaise, Greek yogurt, and lime juice. Blend until smooth. Season with salt and pepper to taste. Adjust the heat by adding more jalapeño if desired. Refrigerate until ready to serve.

          Grill the Chicken:

            Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard any excess marinade. Grill the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.

              Rest and Serve:

                Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Slice the chicken and serve on a platter with the creamy green sauce drizzled on top or served alongside for dipping. Garnish with additional cilantro if desired.
