4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

Salt and pepper to taste

Fresh herbs for garnish (optional)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a small bowl, mix together the garlic powder, onion powder, thyme, rosemary, paprika, salt, and pepper.

      Pat the chicken thighs dry with paper towels to ensure they crisp up in the oven.

        Rub the olive oil all over the chicken thighs, ensuring they are well-coated.

          Sprinkle the spice mixture generously over all sides of the chicken thighs, massaging it in to infuse flavor.

            Place the chicken thighs skin-side up on a baking sheet lined with parchment paper or in a cast-iron skillet.

              Bake in the preheated oven for 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (75°C).

                Once cooked, remove from the oven and let the chicken rest for about 5 minutes before serving.
