1 cup all-purpose flour

1 cup pumpkin puree (not pumpkin pie filling)

1/2 cup milk (or plant-based alternative)

1/4 cup brown sugar

2 large eggs

1/4 cup vegetable oil or melted butter

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

Maple syrup and whipped cream for serving (optional)

Instructions
 

Preheat your waffle maker according to the manufacturer's instructions.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

      In a separate bowl, mix together the pumpkin puree, milk, brown sugar, eggs, and vegetable oil until smooth and well incorporated.

        Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix; the batter should be somewhat lumpy.

          Lightly grease the waffle maker with cooking spray or a brush of oil. Pour an appropriate amount of batter onto the center of the waffle maker (about 1/2 to 3/4 cup, depending on the size of your waffle maker).
