1 cup dried apricots, chopped

1 cup walnuts, chopped

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 cup unsalted butter, softened

1/2 cup brown sugar

2 large eggs

1/2 cup honey or maple syrup

1/2 cup milk

1 teaspoon vanilla extract

Optional: powdered sugar for dusting

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper for easy removal.

    In a medium bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Whisk until well mixed and set aside.

      In a large bowl, cream together the softened butter and brown sugar until light and fluffy. This will take about 3-5 minutes.

        Add the eggs one at a time, mixing well after each addition. Then stir in the honey (or maple syrup), milk, and vanilla extract until fully incorporated.

          Gradually add the dry ingredient mixture to the wet ingredients, stirring just until combined. Be careful not to overmix.

            Fold in the chopped apricots and walnuts, ensuring they are evenly distributed throughout the batter.

              Pour the batter into the prepared cake pan and smooth the top with a spatula.

                Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

                  Allow the fruitcake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
