Ingredients
  

1 large cucumber, peeled and chopped

1 cup fresh lemon juice (about 6-8 medium lemons)

1/2 cup honey or agave syrup (adjust to taste)

4 cups cold water

Fresh mint leaves (optional, for garnish)

Instructions
 

In a blender, combine the chopped cucumber with 1 cup of cold water. Blend until smooth.

    Strain the cucumber mixture through a fine mesh sieve or cheesecloth into a large pitcher, discarding any solids. This will give your lemonade a smooth cucumber flavor.

      Add the fresh lemon juice to the cucumber juice in the pitcher.

        Stir in the honey or agave syrup, mixing well until fully dissolved.

          Add the remaining 3 cups of cold water to the pitcher and stir to combine. Taste and adjust sweetness if needed.

            Chill the cucumber lemonade in the refrigerator for about 30 minutes.

              Serve over ice, garnished with fresh mint leaves if desired.
