2 cups fresh rhubarb, chopped

1 cup sugar (or honey)

4 cups water, divided

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1 teaspoon vanilla extract (optional)

Lemon slices and fresh mint leaves for garnish

Prepare the Rhubarb Syrup: In a medium saucepan, combine the chopped rhubarb, sugar, and 2 cups of water. Bring to a boil over medium heat, stirring occasionally until the sugar is dissolved and the rhubarb breaks down (about 10 minutes).

    Strain the Syrup: Remove the saucepan from heat and let it cool slightly. Strain the mixture through a fine-mesh sieve or cheesecloth into a bowl, pressing down on the rhubarb to extract as much liquid as possible. Discard the solids.

      Mix the Lemonade: In a large pitcher, combine the rhubarb syrup with the remaining 2 cups of water and the freshly squeezed lemon juice. Add the vanilla extract if using, and stir well to combine.

        Chill and Serve: Refrigerate the rhubarb lemonade for at least 30 minutes to chill. When ready to serve, fill glasses with ice cubes, pour the lemonade, and garnish with lemon slices and mint leaves.
