2 cups watermelon, cubed and blended into a puree

1/2 cup almond milk (or any plant-based milk)

1/4 cup chia seeds

1 tablespoon honey or maple syrup (adjust to taste)

1/2 teaspoon vanilla extract

1 cup Greek yogurt (or dairy-free yogurt)

Fresh mint leaves for garnish

Slices of watermelon and berries for topping

Instructions
 

In a mixing bowl, combine the watermelon puree, almond milk, chia seeds, honey or maple syrup, and vanilla extract. Stir well to ensure the chia seeds are evenly distributed.

    Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours or overnight, allowing the chia seeds to expand and the mixture to thicken.

      Once the chia pudding has set, take a mason jar or your preferred serving jar and start by adding a layer of Greek yogurt at the bottom.

        Next, add a generous scoop of the watermelon chia mixture on top of the yogurt layer.

          Repeat the layering process, alternating between yogurt and watermelon chia pudding until the jar is filled, finishing with a layer of chia pudding.

            Top the jar with slices of fresh watermelon, a handful of berries, and a sprig of mint for a refreshing touch.

              Seal the jar and keep it in the fridge until you're ready to enjoy your breakfast.
