Roasted Beet Chips with Whipped Feta Dip

For the Roasted Beet Chips:

2 medium-sized beets (red or golden)

2 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon paprika (optional, for a smoky kick)

Freshly cracked black pepper, to taste

For the Whipped Feta Dip:

1 cup feta cheese, crumbled

1/4 cup cream cheese, softened

1/4 cup sour cream or Greek yogurt

2 tablespoons olive oil

1 tablespoon lemon juice

1 clove garlic, minced

Fresh herbs (such as dill or parsley) for garnish

Salt and pepper, to taste

Prepare the Beets: Preheat your oven to 350°F (175°C). Wash and peel the beets. Using a mandoline slicer or sharp knife, slice the beets very thinly, about 1/8 inch thick, for crispiness.

    Season the Chips: In a mixing bowl, toss the beet slices with olive oil, sea salt, paprika (if using), and freshly cracked black pepper until all slices are evenly coated.

      Roast the Chips: Spread the beet slices in a single layer on a baking sheet lined with parchment paper. Make sure they are not overlapping to ensure they become crispy. Roast in the preheated oven for 20-30 minutes, flipping them halfway through, until they are crispy and slightly curled. Keep an eye on them toward the end to prevent burning.
