2 cups cooked jasmine rice (preferably day-old)

1 lb boneless, skinless chicken thighs, diced

1/4 cup soy sauce

2 tablespoons teriyaki sauce

1 tablespoon sesame oil

2 tablespoons vegetable oil

3 green onions, finely sliced (green parts only)

2 garlic cloves, minced

1/2 cup frozen peas and carrots mix

2 large eggs, beaten

1 tablespoon sake (optional)

1 tablespoon mirin (optional)

Salt and pepper, to taste

Sesame seeds, for garnish

Additional green onions, for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine the diced chicken, soy sauce, teriyaki sauce, and sake. Let it marinate for at least 20 minutes to absorb the flavors.

    Prepare the Rice: If using freshly cooked rice, spread it out on a baking sheet to cool and try to separate the grains. Day-old rice works best as it’s less sticky.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
