4 large eggs

1 cup fresh spinach, chopped

1 ripe avocado, diced

2 tablespoons milk (or cream for extra richness)

1 tablespoon olive oil or butter

Salt and pepper, to taste

A sprinkle of red pepper flakes (optional)

Fresh herbs (such as chives or parsley) for garnish

Instructions
 

Prep the Ingredients: Rinse and chop the spinach into small pieces. Cut the avocado in half, remove the pit, and dice the flesh into small cubes. Set aside.

    Whisk the Eggs: In a bowl, crack the eggs and add the milk. Whisk together until well combined and fluffy. Season with a pinch of salt and pepper.

      Cook the Spinach: In a non-stick skillet, heat the olive oil or butter over medium heat. Add the chopped spinach and sauté for 1-2 minutes until wilted and bright green.
