Sheet Pan Sausage and Veggies

Ingredients
  

1 lb (450g) smoked sausage (like kielbasa or andouille), sliced into rounds

2 cups bell peppers (mixed colors), diced

1 medium red onion, sliced

2 cups Brussels sprouts, halved

2 medium zucchini, sliced into half-moons

3 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

½ teaspoon salt (or to taste)

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper for easy cleanup.

    Prepare the veggies and sausage: In a large mixing bowl, combine the sliced sausage, bell peppers, red onion, Brussels sprouts, zucchini, and minced garlic.

      Season everything: Drizzle the olive oil over the mixture. Sprinkle the smoked paprika, Italian seasoning, salt, and black pepper. Toss everything well until the sausage and vegetables are evenly coated with the oil and seasonings.

        Spread on the sheet pan: Transfer the mixture to the prepared sheet pan, spreading it out in an even layer to ensure everything roasts evenly.

          Roast in the oven: Place the sheet pan in the preheated oven and roast for 25-30 minutes, or until the vegetables are tender and starting to caramelize and the sausage is browned, stirring halfway through for even cooking.
