Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

Ingredients
  

1 lb large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cooked quinoa or rice

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 cup fresh mango, diced

1 lime, juiced (plus zest for garnish)

2 tbsp olive oil

1 tbsp honey

1 tsp chili powder

Salt and pepper, to taste

Fresh cilantro, for garnish

For the Lime-Chili Sauce:

Juice of 2 limes

1-2 tbsp chili sauce (adjust to taste)

1 tbsp honey

1 clove garlic, minced

Salt, to taste

Instructions
 

Marinate the Shrimp: In a bowl, combine shrimp with olive oil, lime juice, chili powder, salt, and pepper. Let it marinate for 15-20 minutes.

    Prepare the Mango Salsa: In a separate bowl, mix diced mango, cherry tomatoes, red onion, and chopped cilantro. Drizzle with lime juice and season with a pinch of salt. Set aside to let the flavors meld.

      Cook the Shrimp: Heat a pan over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they're opaque and cooked through (do not overcook).

        Make the Lime-Chili Sauce: In a small bowl, whisk together lime juice, chili sauce, honey, minced garlic, and a pinch of salt. Adjust seasoning to taste.
