Ingredients

4 large eggs

1 cup cottage cheese (low-fat or full-fat, as preferred)

1/4 cup finely chopped red bell pepper

1/4 cup finely chopped green onions

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic powder

Salt and black pepper, to taste

Fresh dill or parsley, for garnish (optional)

Lettuce leaves or whole grain bread, for serving

Instructions

Boil the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium heat. Once boiling, cover the saucepan, turn off the heat, and let the eggs sit for 9-12 minutes. Adjust the time for desired doneness.

Cool the Eggs: After the eggs have cooked, transfer them to a bowl of ice water or run them under cold water for a few minutes until cooled. This makes peeling easier.

Peel and Chop: Once cooled, peel the eggs and chop them into small pieces. Set aside.

Mix the Base: In a large mixing bowl, combine the cottage cheese, mayonnaise, Dijon mustard, garlic powder, salt, and pepper. Stir until well combined and creamy.

Add Veggies and Eggs: Gently fold in the chopped eggs, red bell pepper, and green onions into the cottage cheese mixture, being careful not to mash the eggs too much.

Chill and Serve: For the best flavor, refrigerate the egg salad for at least 30 minutes to allow the flavors to meld. Serve it over lettuce leaves for a light meal, or spread it on whole grain bread for a hearty sandwich. Garnish with fresh dill or parsley, if desired.
