2 ripe bananas, mashed

1 cup all-purpose flour

1/2 cup rolled oats

1/4 cup sugar (brown or white)

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp salt

1/2 cup milk (or dairy-free alternative)

1 large egg

1 tsp vanilla extract

2 tbsp melted butter (plus extra for greasing)

Optional toppings: honey, maple syrup, chopped nuts, or powdered sugar

Instructions
 

In a large bowl, combine the mashed bananas, milk, egg, melted butter, and vanilla extract. Mix until well combined.

    In another bowl, whisk together the flour, rolled oats, sugar, baking powder, baking soda, cinnamon, and salt until evenly mixed.

      Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Avoid overmixing; a few lumps are okay.

        Preheat a large skillet over medium heat and add a little melted butter to grease the skillet.

          Drop spoonfuls of the batter onto the skillet, ensuring there’s enough space between each fritter. Cook for about 2-3 minutes or until bubbles start to form on the surface.

            Flip the fritters and cook for an additional 2-3 minutes, until golden brown and cooked through.

              Remove the fritters from the skillet and place them on a paper towel to drain any excess oil. Keep warm in a low oven if necessary.
