Ingredients

4 oz smoked salmon

1 medium cucumber

1/2 cup hummus (store-bought or homemade)

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon capers, rinsed and drained (optional)

Lemon zest (for garnish)

Salt and pepper to taste

Toothpicks or small skewers (for serving)

Instructions

Prepare the Cucumber: Wash the cucumber thoroughly. Using a vegetable peeler or mandoline, slice the cucumber thinly into long strips, about 1/8 inch thick. Aim for 10-12 slices.

Make the Hummus Spread: In a bowl, mix the hummus with the chopped dill. Add a pinch of salt and pepper to taste. If you want a more savory flavor, consider adding a squeeze of lemon juice.

Assemble the Roll-Ups: Lay out a slice of smoked salmon on a clean cutting board or plate. Spread a thin layer of the dill-infused hummus over the salmon.

Add Cucumber: Place one strip of cucumber on one end of the smoked salmon, and sprinkle a few capers on top (if using).

Roll it Up: Carefully roll the salmon tightly around the cucumber strip, starting from the side where the cucumber and capers are placed. Make sure the filling stays inside as you roll. Secure with a toothpick if necessary.

Garnish and Serve: Arrange the roll-ups on a serving platter. Sprinkle with some lemon zest and additional dill for presentation.

Enjoy: Serve immediately or refrigerate for about 15-20 minutes for a chilled appetizer. Perfect for parties, starters, or a refreshing snack!
