Soft Pretzels with Cheese Dip

For the Pretzels:

4 cups all-purpose flour

1 packet (2 1/4 tsp) active dry yeast

1 1/2 cups warm water (about 110°F)

1/4 cup granulated sugar

1 tsp salt

1/4 cup baking soda

Coarse sea salt (for topping)

2 tbsp unsalted butter (melted)

For the Cheese Dip:

2 cups shredded cheddar cheese

1 cup milk (whole or 2%)

2 tbsp all-purpose flour

1 tsp garlic powder

1/2 tsp cayenne pepper (optional for heat)

1 tbsp butter

Salt to taste

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until the mixture is frothy.

      - Add flour and salt to the yeast mixture. Stir with a wooden spoon until it forms a rough dough.

        - Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

          - Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

            Shape the Pretzels:

              - Preheat your oven to 450°F (232°C) and line two baking sheets with parchment paper.

                - Once risen, punch down the dough and divide it into 8 equal pieces.

                  - Roll each piece into a long rope (about 24 inches) and twist into a pretzel shape.

                    - Place the shaped pretzels on the prepared baking sheets.

                      Baking Soda Bath:

                        - In a large pot, bring 4 cups of water and the baking soda to a gentle boil.

                          - Carefully place each pretzel in the boiling solution for about 30 seconds, then remove with a slotted spoon and place back on the baking sheets.

                            - Brush each pretzel with melted butter and sprinkle with coarse sea salt.

                              Bake the Pretzels:

                                - Bake in the preheated oven for 12-15 minutes, or until golden brown.

                                  - Remove from the oven and let cool slightly on a wire rack.

                                    Prepare the Cheese Dip:

                                      - In a saucepan over medium heat, melt the butter and whisk in the flour to create a roux. Cook for about 1 minute until it's bubbly.

                                        - Gradually add the milk while whisking continuously until smooth and it thickens (about 3-5 minutes).

                                          - Lower the heat and stir in the shredded cheddar cheese, garlic powder, cayenne pepper, and salt. Mix until the cheese is fully melted and smooth.

                                            Serve:

                                              - Serve the warm pretzels with the hot cheese dip for an irresistible snack!
