Southern Fried Salmon Patties

1 lb fresh or canned salmon, drained and flaked

1 cup breadcrumbs (preferably seasoned)

1/2 cup finely chopped green onions

1/4 cup finely chopped bell pepper (any color)

1/4 cup mayonnaise

1 large egg, beaten

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1/4 cup cornmeal (for coating)

Vegetable oil for frying

Instructions
 

In a large mixing bowl, combine the flaked salmon, breadcrumbs, green onions, bell pepper, mayonnaise, beaten egg, Dijon mustard, Worcestershire sauce, garlic powder, paprika, salt, and pepper.

    Mix thoroughly until all ingredients are well combined. If the mixture feels too wet, add a bit more breadcrumbs; if too dry, add a touch more mayonnaise.

      Form the mixture into small patties, about 2-3 inches in diameter. You should have approximately 8-10 patties.

        Place the cornmeal on a plate. Gently dredge each patty in the cornmeal, coating both sides lightly.

          Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Once hot, carefully place the patties in the skillet, ensuring not to overcrowd the pan.

            Fry the patties for about 3-4 minutes per side or until golden brown and crispy. Carefully flip them using a spatula.

              Once cooked, transfer the patties to a paper towel-lined plate to drain any excess oil.

                Serve warm with a side of tartar sauce, a squeeze of lemon, or over a fresh salad.
