Spicy Turkey Cauliflower Rice

Ingredients
  

1 lb ground turkey

1 medium cauliflower head, riced (about 4 cups)

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 jalapeño, finely chopped (seeds removed for less heat)

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon paprika

Salt and pepper to taste

1 cup canned black beans, drained and rinsed

1/2 cup corn (fresh or frozen)

2 green onions, sliced (for garnish)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Cauliflower: If you haven’t purchased pre-riced cauliflower, cut the cauliflower head into florets and pulse in a food processor until it resembles rice. Set aside.

    Cook the Ground Turkey: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until translucent.

      Add Garlic and Turkey: Stir in the minced garlic and cook for an additional 30 seconds. Then, add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 5-7 minutes.

        Incorporate Peppers and Spices: Add the diced red bell pepper, jalapeño, chili powder, cumin, paprika, salt, and pepper. Stir and cook for another 5 minutes until the peppers soften.

          Mix in Cauliflower Rice: Add the riced cauliflower to the skillet, mixing well to combine with the turkey and vegetables. Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender.

            Add Beans and Corn: Mix in the black beans and corn, heating thoroughly for about 3-4 minutes. Taste and adjust seasoning if necessary.
