Spinach and Feta Quesadillas (20 minutes)

Ingredients
  

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

2 cloves garlic, minced

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Sour cream or Greek yogurt for serving (optional)

Instructions
 

Sauté the Spinach: In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.

    Add Spinach: Add the chopped spinach to the skillet, stirring frequently until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes (if using). Remove from heat.

      Prepare the Quesadilla Filling: In a bowl, combine the sautéed spinach mixture with the crumbled feta and shredded mozzarella. Mix until well combined.

        Assemble Quesadillas: Lay one tortilla flat in a clean skillet over medium heat. Spread a quarter of the spinach and feta mixture evenly over half of the tortilla. Fold the other half over, forming a semi-circle.

          Cook Quesadilla: Cook the quesadilla for about 2-3 minutes on each side, or until golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.

            Slice and Serve: Remove the quesadillas from the skillet, let them cool for a moment, then slice into wedges. Serve warm with sour cream or Greek yogurt on the side.
