For the Salad:

2 cups mixed greens (arugula, spinach, and romaine)

1 cup shredded carrots

1 cup cucumber, julienned

1 cup red bell pepper, thinly sliced

1⁄2 cup red cabbage, thinly shredded

1⁄2 cup bean sprouts

1 avocado, diced

1/2 cup fresh cilantro leaves

1/2 cup fresh mint leaves

1 cup cooked shrimp or tofu (for a vegetarian option)

Rice paper wrappers (optional, for wrapping)

For the Spicy Ginger Dressing:

3 tablespoons fresh ginger, grated

2 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons rice vinegar

1 tablespoon lime juice

2 teaspoons honey or maple syrup

1 clove garlic, minced

1 teaspoon sesame oil

1 teaspoon sriracha or chili paste (adjust for desired spice level)

Instructions
 

Prepare the Salad: In a large mixing bowl, combine the mixed greens, shredded carrots, cucumber, red bell pepper, red cabbage, bean sprouts, avocado, cilantro, mint, and cooked shrimp or tofu. Toss gently to combine all the ingredients evenly.

    Make the Dressing: In a separate bowl, whisk together the grated ginger, soy sauce, rice vinegar, lime juice, honey or maple syrup, minced garlic, sesame oil, and sriracha. Whisk until the dressing is well combined and smooth.
