1 lb flank steak, sliced against the grain

1/4 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons rice vinegar

1 tablespoon sesame oil

Salt and pepper, to taste

1 tablespoon cornstarch (optional, for thickening)

For the Rotini:

8 oz rotini pasta

1 tablespoon olive oil

1/2 teaspoon red pepper flakes (optional)

1 cup cherry tomatoes, halved

1 cup spinach leaves

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Instructions
 

Marinate the Steak: In a medium bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, and a pinch of salt and pepper. Add the sliced flank steak and mix well. Allow it to marinate for at least 30 minutes or up to 2 hours for enhanced flavor.

    Cook the Rotini: Bring a large pot of salted water to a boil, add the rotini, and cook according to package instructions until al dente. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add cherry tomatoes and sauté for about 3 minutes until they begin to blister. Stir in spinach and red pepper flakes (if using), and cook until the spinach wilts. Season with salt and pepper to taste.

        Cook the Steak: In the same skillet, push the vegetables to one side and add the marinated flank steak (reserve marinade). Cook on high heat for about 2-3 minutes per side, or until browned and cooked to your desired doneness. If you like a thicker sauce, add cornstarch to the reserved marinade and simmer it until thickened, about 2-3 minutes.
