Ingredients

2 cups fresh strawberries, hulled and halved

2 ripe mangoes, peeled and diced

½ cup coconut water (or water for a lighter version)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 tablespoon fresh lime juice

A pinch of salt (optional)

Instructions

Prepare the Ingredients: In a blender, add the hulled strawberries, diced mangoes, coconut water, honey (or maple syrup), lime juice, and a pinch of salt.

Blend Until Smooth: Blend the mixture on high speed until you achieve a smooth, even consistency. If you prefer some texture, blend only until the fruits are roughly combined.

Taste Test: Taste the mixture and adjust sweetness if necessary by adding more honey. Blend again briefly to combine.

Pour into Molds: Pour the blended fruit mixture into popsicle molds, leaving a little room at the top for expansion as they freeze.

Insert Sticks: Carefully insert popsicle sticks into the center of each mold.

Freeze: Place the molds in the freezer for at least 4-6 hours, or until fully frozen.

Release from Molds: Once frozen, run warm water over the outside of the molds for about 30 seconds to help release the popsicles. Gently pull the popsicles out.

Serve and Enjoy: Serve the popsicles immediately or store them in a ziplock bag in the freezer for up to a month. Enjoy your refreshing treat!
