2 large red onions, thinly sliced

3 tablespoons sumac

1 teaspoon kosher salt

1 tablespoon olive oil

2 tablespoons fresh lemon juice

2 tablespoons fresh parsley, chopped

1 teaspoon black pepper

Pinch of cayenne pepper (optional, for a kick)

Instructions
 

Begin by peeling and thinly slicing the red onions into rings. Place them in a large mixing bowl.

    In a small bowl, combine the sumac, kosher salt, black pepper, and cayenne pepper (if using). Sprinkle this spice mixture over the sliced onions.
