4 ears of fresh corn, husked and kernels removed

2 medium zucchinis, diced

1 medium onion, chopped

2 cloves garlic, minced

2 medium potatoes, diced

4 cups vegetable or chicken broth

1 cup heavy cream or coconut milk (for a dairy-free option)

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil or parsley for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and smoked paprika, cooking for an additional minute until fragrant.
