Summer Corn Salad

Ingredients
  

4 ears of fresh corn, husked and kernels removed

1 medium red bell pepper, diced

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 avocado, diced

Juice of 2 limes

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon smoked paprika (optional)

Feta cheese, crumbled (optional)

Instructions
 

Start by boiling a large pot of water and gently add the corn. Cook for about 3-5 minutes until tender but still crisp. Drain and immediately transfer to an ice bath to stop the cooking process. Let cool for a few minutes, then remove from the bath and set aside.

    In a large mixing bowl, combine the diced red bell pepper, cucumber, cherry tomatoes, red onion, and cilantro.

      Add the cooled corn kernels to the vegetable mixture and gently toss to combine.

        In a separate small bowl, whisk together the lime juice, olive oil, salt, pepper, and smoked paprika until well combined.

          Drizzle the dressing over the corn salad and gently mix until all ingredients are coated.

            Just before serving, fold in the diced avocado and, if desired, sprinkle crumbled feta cheese on top for an extra burst of flavor.

              Serve chilled or at room temperature for the best flavor and texture.
