4 cups kale, chopped and stems removed

2 ripe peaches, sliced

1 cup fresh blueberries

1/2 cup crumbled feta cheese

1/4 cup chopped walnuts, toasted

1/4 red onion, thinly sliced

1/4 cup extra-virgin olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

Salt and pepper to taste

Instructions
 

In a large bowl, massage the chopped kale with a pinch of salt for about 2-3 minutes until the leaves become tender and slightly wilted.

    In a small bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), and a pinch of salt and pepper to create the dressing.
