SUMMER VEGETABLE STEW

Ingredients
  

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 medium zucchini, diced

1 medium yellow squash, diced

1 cup cherry tomatoes, halved

1 cup green beans, trimmed and cut into 1-inch pieces

1 cup corn kernels (fresh or frozen)

2 cups vegetable broth

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add the bell pepper, zucchini, and yellow squash to the pot. Sauté for about 5-7 minutes, until the vegetables are slightly softened.

        Incorporate the cherry tomatoes, green beans, and corn into the mixture, stirring well.

          Pour in the vegetable broth and bring the stew to a gentle simmer.

            Add the dried oregano, dried basil, salt, and pepper. Stir to combine all the flavors.

              Cover the pot and allow the stew to cook for about 15-20 minutes, until all the vegetables are tender.

                Taste and adjust the seasoning if necessary.

                  Serve hot, garnished with fresh basil leaves for an aromatic finish.
