Ingredients
  

1 lb (450 g) chicken thighs, boneless and skinless, cut into bite-sized pieces

1 cup pineapple chunks (fresh or canned)

1 cup jasmine rice

2 cups chicken broth

1 red bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon ginger, grated

1 tablespoon olive oil

Salt and pepper, to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Cook the Rice: In a medium saucepan, bring 2 cups of chicken broth to a boil. Add the jasmine rice, reduce heat to low, cover, and simmer for about 15-20 minutes or until rice is cooked and liquid is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.

    Sauté the Chicken: In a large skillet or wok, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes until browned and cooked through. Remove the chicken and set aside.

      Cook the Vegetables: In the same skillet, add the diced onion, red bell pepper, and minced garlic. Sauté for about 3-4 minutes until the vegetables are tender.

        Combine Ingredients: Return the chicken to the skillet. Add the pineapple chunks, soy sauce, honey, and grated ginger. Stir to combine and let it simmer for an additional 3-5 minutes, allowing the flavors to meld together.
