Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

1 medium onion, chopped

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup pineapple chunks (fresh or canned)

1/4 cup soy sauce

2 tablespoons fish sauce

2 tablespoons brown sugar

1 tablespoon rice vinegar

1-2 tablespoons Thai chili paste (adjust to your spice preference)

1 teaspoon ginger, grated

1 tablespoon lime juice

1/4 cup fresh basil leaves, chopped (plus extra for garnish)

Salt and pepper to taste

Cooked Jasmine rice, for serving

Instructions
 

Prep the Chicken: Season the chicken pieces with salt and pepper. Set aside.

    Cook the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the chopped onion and sauté for 2-3 minutes until translucent. Add the minced garlic, ginger, and Thai chili paste. Cook for an additional minute, stirring frequently to enhance the flavors.

        Add Vegetables: Incorporate the red bell pepper and pineapple chunks into the skillet. Stir-fry for around 2-3 minutes until the bell pepper is just tender.

          Make Sauce: In a small bowl, whisk together the soy sauce, fish sauce, brown sugar, rice vinegar, and lime juice. Pour this sauce over the vegetables in the skillet.

            Combine Chicken: Return the cooked chicken to the skillet. Stir everything together and let it simmer for 2-3 minutes, allowing the flavors to meld.

              Finish with Basil: Just before serving, stir in the chopped basil leaves. Taste and adjust seasoning if necessary.
