1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), diced

1/2 cup red onion, finely chopped

1 avocado, diced

1 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

1 lime, juiced

1/4 cup olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Tortilla strips for topping (optional)

Instructions

Prepare the Dressing: In a small bowl, whisk together the lime juice, olive oil, ground cumin, chili powder, salt, and pepper until well combined. Set aside.

Mix the Base: In a large mixing bowl, combine the chopped chicken, black beans, corn, cherry tomatoes, diced bell pepper, and red onion. Gently mix together.

Add the Cheese and Avocado: Carefully fold in the diced avocado and shredded cheddar cheese to the chicken mixture, being cautious not to mash the avocado.

Combine with Dressing: Pour the prepared dressing over the salad mixture. Toss gently until everything is well coated with the dressing.

Final Touch: Stir in the chopped cilantro for a fresh burst of flavor.

Serve: Transfer the salad to serving bowls or a platter. Top with tortilla strips for added crunch if desired, and serve immediately.
