Ingredients

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound ground beef (or Italian sausage)

1 can (28 ounces) crushed tomatoes

4 cups chicken or vegetable broth

2 teaspoons dried basil

1 teaspoon dried oregano

1 teaspoon sugar (to balance acidity)

8 ounces uncooked pasta (like orecchiette or rotini)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

Cook Meat: Add the ground beef (or sausage) to the pot. Cook until browned, breaking it apart with a spatula, for about 6-8 minutes. Drain excess fat if necessary.

Combine Tomatoes and Broth: Stir in the crushed tomatoes, broth, dried basil, dried oregano, and sugar. Bring the mixture to a boil, then reduce heat and let it simmer for 10 minutes to develop flavors.

Add Pasta: Add the uncooked pasta to the soup and cook according to package instructions, typically around 8-10 minutes, until al dente.

Mix in Cheese: In a small bowl, combine ricotta cheese, 1/2 of the mozzarella cheese, and the grated Parmesan cheese. Stir well to mix.

Serve: Ladle the soup into bowls. Top each bowl with a generous dollop of the cheese mixture and sprinkle with the remaining mozzarella. Garnish with fresh basil or parsley if desired.

Enjoy: Serve hot and enjoy the comforting flavors of this delicious lasagna soup!
